Brad Meltzer, owner of Benihana in South Texas, sets sights on new Wing Zone concept
ATLANTA - At a time when the economy is causing many small businesses to stifle, Wing Zone, a 100-unit chicken wing takeout/delivery concept, has its eyes set on bringing on high-level entrepreneurs to continue to progress the brand forward. The nation’s authority of sauce and ambassadors of flavor has recently signed its first double digit franchise deal with one of Texas’ most elite and experienced businessmen and restaurateurs, Brad Meltzer.

Meltzer has established a big name for himself in South Texas, dabbling in everything from restaurant ownership to construction management. For the past 12 years, Meltzer has brought great Japanese cuisine to San Antonio and Austin with Benihana, an extremely elite franchise system and in which he has become one of its most successful franchisees. Now, “Mr. Benihana of San Antonio and Austin”, as he is called, decided to expand his portfolio with another restaurant concept.
“Wings are an underpenetrated restaurant concept and I wanted to introduce San Antonio and Austin to the best wings in the nation,” Meltzer said. “Wing Zone has the winning formula and I’m going to make it well-known in South Texas. The sky’s the limit on how far this partnership can go.”
As a part of his deal, Meltzer will unleash a brand-new Wing Zone restaurant footprint with some of his 10 planned locations for the San Antonio and Austin areas. Wing Zone, the takeout/delivery wing specialists, will see a new prototype under Meltzer’s direction, transforming his locations into a sit-down restaurant. The newest locations will have a wait staff, TVs for watching the weekend games, beer and wine, and sports memorabilia to add some flair to the new restaurants: Spurs gear for San Antonio and University of Texas gear in Austin.
“The new store prototype offers more diversity and gives wing fans a choice to order takeout/delivery or dine in,” Friedman said. “We are excited about continuing to innovate our brand and keep our customers intrigued.”
Meltzer’s son, David and award-winning iron chef, Moses Gomez will help Meltzer bring to life the new Wing Zone concept, set to open as soon as 2010.
“Wing Zone has won the awards and the prestige that proves it’s nation’s best wing concept, and now I’m going to take the country’s best wing shop and give it a strong brand presence in South Texas,” Meltzer said.
Wing Zone’s extensive menu offers 15 unique flavors of fresh, cooked-to-order wings, including favorites such as Nuclear, Honey BBQ, Lemon Pepper, Ragin’ Cajun, Garlic Parmesan, and Spicy BBQ. In addition, Wing Zone offers salads, grilled sandwiches, burgers and a variety of appetizers such as: chicken fingers, mozzarella sticks, battered mushrooms, onion rings and cheese fries.
Wing Zone was founded in 1991 at the University of Florida by Matt Friedman and Adam Scott, who cooked wings with homemade sauces in their fraternity house kitchen and delivered them to fellow college students. After opening several Wing Zone locations, Friedman and Scott began franchising Wing Zone in 1999.
